TOM COLICCHIO

Chef/Owner

Tom Colicchio was awarded his first three stars from The New York Times as executive chef of Mondrian. Since then he has seen similar acclaim for Gramercy Tavern (with Danny Meyer), his signature venture Craft (2002), and Colicchio & Sons (2010), all in New York.  Craft was awarded The James Beard Foundation Award for “Best New Restaurant” in 2002, the same year Colicchio received The Bon Appétit American Food and Entertaining Award for “Chef of the Year.” The New York Times revisited Craft in September 2011, ten years after its debut, upholding its three stars and stating that the restaurant is “as magical and delicious as it was when it opened.”

KATIE GRIECO

Managing Partner, Operations and New Projects

Katie grew up loving to cook.  For a first grade class project she taught a Chinese cooking class, in seventh grade she developed a concept for a bed and breakfast called the Three Pines Inn. Hospitality was on her mind from an early age, but when it came time for college, Katie pursued a liberal arts education and received a degree in religion from Princeton University.

LAUREN HIRSCHBERG

Director of Culinary Operations

As the child of an avid cook and part-time caterer, Lauren Hirschberg has always been around food. Growing up in Montclair, New Jersey, he paid close attention as his mother prepared meals for family and friends.  After expressing interest in learning about cooking, his mother let him help on occasion and it wasn’t long until she gave him free reign with family dinners.

A native of Western New York, Graceanne received degrees in Management and Psychology from the University of Buffalo.  She moonlighted in two of the area’s best restaurants during her studies and, from these experiences, ultimately recognized a true passion for the inner workings of the hospitality industry.

Yvonne Mancini joined the Craft Executive Management Team as Director of Human Resources in winter 2012. With over 20 years of experience in the hospitality industry, Yvonne draws on her knowledge and skill set to oversee and manage Human Resources for the Craft restaurants nationwide.
